Chicken Sausage Breakfast Muffins

Chicken Sausage Breakfast Muffins
 
These take about 10 minutes of prep and 25 minutes to cook but then you can keep them in the fridge for the kids to heat up later! Also, the finer you dive the veggies the more your kids won't know they're there ;)
 
1/4 red onion -diced
1/4 bell pepper -diced
1/2 pkg Breakfast Chicken Sausage -8oz.
Egg white Liquid
Salt & Pepper
12T cheese
Saute onions, bell pepper, and add sausage until veggies are soft. Put equal amounts of sausage mixture into 12 muffin pans. Add egg white liquid about a 1/4 inch from the top. Top with a pinch of cheese, about 1T. Bake at 350 for 25minutes or until a toothpick comes out clean.

Cucumber Sandwich Bites

Cucumber Sandwich Bites
 
Lunch can get boring if you pack the same stuff! Switch it a up with a tasty treat!
 
Assemble Sandwich...
 
Cucumber slice
Spread with Light Creamy Swiss Laughing Cow Wedge
Add two slices Salami- or whatever lunch meat you like
Cucumber slice
Top with tomato or olive and hold together with a toothpick

Fast, easy, and Super tasty!!
My new favorite find is "Flatout"!! Flatout original is 100 calories and Flatout light is 90. For pizza I like the original because it gets a little bit crispier but if you like your crust a soft the light is better.
 
2 Flatout breads
1/2 cup pizza sauce
1cup mozzarella cheese-I like the skim milk cheese
 
Whatever your favorite pizza toppings are....we usually put..
 
jalapeno, black olive, red onion, and ham
 
Bake @400 for 10 minutes and then turn up to broil for 3 minutes or until cheese is browned.

Shrimp Jalapeno Stuffed Mushrooms

Shrimp Jalapeno Stuffed Mushrooms
These are very easy an delicious! I substituted ham for bacon just to cut down on fat and calories.
 
20-24 Mushrooms
2 slice- thinly sliced ham lunch meat
1 cup shrimp meat-press dry
2 Serrano peppers -sliced into round slices
1T light butter
1/8 cup shredded Parmesan cheese
1/2t salt, pepper, & cayenne pepper
1/4 cup cilantro
 
Take stems out of the mushrooms. Use about half of the stems or 1/2 cup. Chop stems, shrimp, ham, and cilantro into a fine mixture. Mix in butter and seasoning. If you like them spicy chop one pepper into mixture. Then spray mushrooms with olive oil spray and bake face side down for 15 minutes @400. Let cool and soak up any moisture with paper towels. Take mixture and stuff into mushrooms, top with a pinch of Parmesan cheese and one slice of Serrano pepper. Bake @ 400 for 15minutes or until brown. 
25 calories per mushroom

1 cup banana
1 cup almond milk
1T unsweetened cocoa powder
1t vanilla extract
1T peanut butter
1 cup ice
 
Blend. Super quick and easy!!

Quick Tip- Tostada Shell

So I love tostadas but never knew it was so easy to make the shell! After making flautas using cooing spray and having it turn out so good it gave me this idea...

Wrap a wet paper towel around your flour tortilla and heat about a minute in the microwave or until soft just like the flautas. Then spray the tortilla with cooking spray and lay over a bundt pan. The one I have has a large center so I drape the tortilla over it. Bake at 375 for about 5-7 minutes or until crispy! Yum!

Bacon wrapped Jalapeno Poppers

These are so easy but so yummy!
 
If you're looking to cut out fat and calories try making these with reduced fat cream cheese and wrap with a thin sliced lunchmeat ham. So good!
92 calories with bacon and reg. cream cheese..
50 calories with ham and reduced fat cream cheese :)

Quick Tip- Low Calorie Cocktails

So nobody wants to drink 100's of calories! I like the "Diet Ocean spray Cranberry". It has only 5 calories! Add Vodka, Cranberry, and a slice of lime! Yum!
And if you want to switch it up a little add a splash of OJ. :)

Red Enchiladas

I make these a couple different ways. Most of the time I make my own sauce, it's quick and it makes enough to do two pans. So, I freeze the extra for next time. Makes it super cheap too, But for times when I don't have the extra 10 minutes I use canned enchilada sauce. As for the chicken I put it in the crock pot with one can or 11/2 cups enchilada sauce. Cook on low for 4-6hrs. Shred.

Over the years I have been asked many times for this recipe. Hope you like it! Tip- double the recipe if you're making it for a party :)

Quick Tip- Turkey burger

The trick with turkey burger is the seasoning. Turkey needs a little extra. Also, I like the Zacky 15% fat, it has a little more flavor but for a 4oz. serving it has 84 calories from fat vs. 153 for ground beef. I also like to buy it in bulk. I put it into quart size freezer bags and it holds about a pound and a half.

Easy Chicken Tacos

Throw 4-5 frozen boneless skinless chicken breasts into your crock-pot. Pour 1 can green enchilada sauce over and cook on low 4-6 hrs. Shred. Serve in tacos.
We will bake our tortillas, recipe is under Quick tip low calorie taco shells and serve with tomatillo salsa!

Steak with Sauted Mushrooms

I used the pork chop marinade for the steak. I usually only change it by using parsely instead of basil when using beef and top it with sauteed mushrooms! Yum!
